
Neapolitan Pizza
There's nothing quite like the taste of a wood fired Neapolitan pizza, with its crispy, slightly charred crust and savory, flavorful toppings. If you're lucky enough to have a wood fired pizza oven at your disposal, here's a recipe for cooking the perfect Neapolitan pie.
Ingredients:
- 1 cup warm water (110°F)
- 1 tsp sugar
- 1 tsp active dry yeast
- 3 cups tipo 00 flour
- 1 tsp salt
- 1 tbsp olive oil
- 1 cup crushed San Marzano tomatoes
- 4 oz fresh mozzarella, thinly sliced
- Fresh basil leaves
- Salt and pepper, to taste
Instructions:

In a small bowl, combine the warm water, sugar, and yeast. Stir to dissolve and let sit for 5-10 minutes, until the yeast has activated and the mixture is frothy.

In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil and mix until a smooth, slightly sticky dough forms.

On a lightly floured surface, knead the dough for 5-10 minutes, until it is smooth and elastic. Place the dough in a lightly oiled bowl and cover with a damp cloth. Let rise in a warm place for 1-2 hours, until doubled in size.

Preheat your wood fired pizza oven to approximately 900°F.

Punch down the dough and divide it into 4 equal pieces. On a lightly floured surface, roll out each piece of dough into a thin, round crust.

Transfer the crusts to a floured peel or a large, flat surface. Spread a layer of crushed San Marzano tomatoes over each crust, leaving a 1-inch border around the edges. Top with slices of mozzarella and a few basil leaves. Season with salt and pepper to taste.

Carefully transfer the pizzas to the hot pizza oven, using the peel or a large, flat spatula. Bake for 2-3 minutes, until the crust is golden brown and the cheese is melted and bubbly.
